Chicken Sizzler with Pepper Sauce

This dish is nothing but an assembled piece. It is more like a chinese fried rice presented in a different manner and of course with a different sauce and different taste. Make sure you prepare the different components in advance and assemble it with ease. 
Although there is use of butter and oil, I have tried to use the bare minimum. Also, I have not fried the potatoes to make french fries. I have made potato wedges which actually taste better. So this dish is an accomplishment for me because it is one of my favourites and it feels good to know that I have managed to prepare it in the restaurant style. It is a healthy festive mood indulgence. So go ahead and try it out! 


For Chicken Marination
Chicken breast pieces – 2 (boneless)
Salt - 1 tsp
Crushed black pepper - 2 tsp
Dried oregano – ½ tsp
Garlic paste – ½
Lemon juice – ½ tbsp
Soy sauce - 1 tbsp
Chili sauce - 1 tbsp

For Potato Wedges
2 potatoes




For Veggies
Cabbage – ½ cup
Onion (sliced) – ½ cup
French beans – 1 cup
Green peas – 1 cup
Butter - 1 tsp
Oil - 1 tbsp
Freshly crushed black pepper – 1 tsp
salt – 1 tsp

Fried Rice
Rice (basmati) – 1 cup
Garlic (minced) – 1 tbsp
Freshly crushed pepper – 1 or 2 tbsp
Parsley or spring onion greens - 1 to 2 tbsp for garnishing
Butter – 1 tbsp
Oil – 1 tsp



Black Pepper Sauce
Oil - 1 tbsp
Butter - 1 tbsp
Garlic (minced) – 1 tbsp
Freshly crushed black pepper – 2 tbsp
Salt - 1 tsp
Soy sauce - 1 tbsp
Barbecue sauce - 1 tbsp
Red chili powder – 1 or 2 tsp (according to taste
Corn flour 1 tsp (diluted in 2 tbsp water)
Chicken stock (for sauce) 1 cup (according to consistency required)

Method

Chicken Marination
Pound chicken with a rolling pin gently
Mix the marinade well and apply to the chicken
Leave it for 1 to 2 hours




Pepper Sauce
Add oil and butter in a pan and mix
Add minced garlic immediately and roast it on low flame.
Stir well
Add all the remaining spices and sauces in it and stir again
Add chicken stock and heat it
Add corn flour in water and mix
Add this to the pan and stir constantly to avoid lumps
Set it aside to cool completely
Adjust thickness after cooling by adding 2 to 3 tbsp water if required



Fried Rice
Cook rice till just done
Drain and keep aside
Heat oil and butter in a non-stick pan
Add garlic and stir
Add cooked rice and mix gently
Top with chopped parsley or spring onion greens

Chicken
Preheat a grill pan or frying pan and add 1 tbsp oil
Place the chicken on it and let it cook on medium flame on either sides till done




Veggies
Immerse the green peas and french beans in hot water for about 15 mins
Drain off the water and microwave for about 5 mins till just done
Drain off any moisture completely
Heat oil and butter in a non-stick pan
Add cabbage and saute for a minute
Add green peas and french beans and sauté
Mix well
Add salt and crushed pepper and mix well
Keep aside





Potato Wedges
Wash the potatoes thoroughly
Slice them and immerse in salt water for about 20 mins
Drain off the water and dry it
Add salt and oil to the slices and mix well
Bake in an oven preheated to 180 degrees C for about 15 minutes
Let it cool in the oven



Preparing The Platter
Grease the sizzler plate and heat it on the gas (for 15 to 20 mins till it becomes very hot) or in the oven preheated t0 180 degrees C
Freeze 2 cabbage leaves
Place them on the sizzler plate
Spoon the rice into the leaves
Spread the veggies on one side of the plate
Place the chicken pieces on the other side
Place the potato wedges
Drizzle pepper sauce as much you want
Place in the preheated oven for the hot sizzling effect
Bake for 10 minutes
Serve sizzling hot

Gluten Free Plum Cake



Ingredients  
Raw Banana Four – 1 cup
Jaggery – 1 cup
Baking powder – ½ tsp
Baking soda – ½ tsp
Eggs – 2
Butter – 2 tbsp
Coffee powder – 1 tsp
Mixed spices – 1 tbsp
Mix fruits (raisins, cashewnuts, walnuts, dried blackberries,) – 1 cup (soaked in ½ cup wine)



Method
Mix the dry ingredients
Add coffee powder to hot water and mix
Beat the eggs
Add coffee and melted butter and beat again
Add the dry mixture little by little and mix slowly
Add the dry fruit mix
Add the wine in which it was soaked
Add some more wine if required to adjust  consistency
Bake for almost 25 mins in an oven preheated to 180 degrees C

It is the time of the year for boozy cakes and desserts. So here I go! The fact that I have been gifted a bottle of Irish Whiskey only adds to the festive feel. And yes! I have tried to make it in my usual style with healthy ingredients - no refined flour and no sugar. So go on try out this yummy and healthy brownie


Ingredients
Whole wheat flour – 1 cup
Cocoa powder – 3 tbsp
Cooking Chocolate – 50 gms
Jaggery powder – ¾ cup (adjust according to taste)
Baking powder – ½ tsp
Baking soda – ½ tsp
Egg – 1
Milk – ½ cup (add more to adjust consistency)
Oil - ¼ cup
Irish whiskey – ¼ cup
Chocolate chunks (optional) for topping – 40 gms


Method
Mix the dry ingredients
Melt the cooking chocolate
Whisk together egg, milk, oil and whiskey
Add the melted chocolate and mix well
Add the dry ingredients slowly and mix
Top with chocolate chunks (optional)
Bake for 20 mins in an oven preheated at 180 degrees C
Cool and enjoy it warm with hot coffee or topped with hot chocolate sauce

In the course of my online reading, I came across a very interesting article on the liver. And I want to share it with my readers. The major part of the article may seem not-doable but I have included it for you to gain a deeper insight into the functions of the liver and nutrition required to keep it going. So here we go ....

Then here’s something you need to know:
The most overlooked cause of your problems likely is a fatigued liver! And it could be the hidden reason your body Is falling apart. Fatigued Liver can cause everything from fatigue to memory problems to age spots - yet doctors rarely check for it.

So how will you rejuvenate your liver and rebuild your body to get rid of your health problems. But before that let’s see what your liver does in the body.
The liver is the hardest working organ in your body. Every day, it has to perform over 500 essential functions like, to name a few:
Producing more than 13,000 crucial chemicals... and regulating over 50,000 vital enzymes

Filtering nearly 100 gallons of blood that pass through it every day
Producing a full quart of bile daily to break down fat and help with food digestion

Now, when you are young, your liver can carry out all these functions efficiently. But as you get older, your liver becomes less efficient. Add to that, decades of exposure to pesticides, heavy metals, chemicals, and air pollution – all this also cause your liver to age faster. It can't keep up with its heavy workload. It cannot heal itself and starts to deteriorate and shrink.
Even worse, it starts to develop shorter telomeres at a faster rate. Telomeres are the caps at the end of each strand of DNA. When your telomeres get shorter, you age at an escalating rate. As a result, you may feel tired all the time, as your liver cannot convert glucose to energy quickly. You may keep piling on the kilos around the waistline, and get more cellulite, as your liver is clogged with fat deposits. And you may suffer from sex hormone imbalances and poor sex drive.

A fatigued liver can also lead to many other symptoms like:

Here’s how you can rejuvenate your liver to feel healthier and younger: 

Milk thistle. Hundreds of studies have confirmed that it protects the liver from alcohol, drugs, and toxins. It blocks inflammation and prevents liver damage. And it even helps the liver repair itself by growing new liver cells.
But that is not enough. As good as it is, only Milk Thistle is not enough to give your liver the protection it needs. Why?
-          First, the liver needs a wide variety of nutrients to perform all its functions. Milk thistle does not have all the nutrition your liver needs to cope with its heavy workload
-          Second, Milk Thistle benefits mostly your liver. But your liver does not function in isolation. Its performance depends on the support it gets from other systems of your body, especially your adrenal glands. When your adrenal glands are not working properly, your liver struggles, too. In fact, scientists have found that up to 65% of patients with weakened livers also have sluggish adrenals. So for your liver to work optimally, you need to boost your adrenals, too. And one of the best ways to boost your adrenals is with Licorice Root.


Licorice (Mulethi in Hindi) is rich in a compound called glycyrrhizin. Glycyrrhizin slows down the breakdown of adrenal hormones like cortisol, progesterone, and aldosterone. This takes a lot of stress off your adrenal glands. And licorice root does not only support your adrenals, it supports your liver too. Studies show it enhances liver function, defends against liver inflammation and injury and prevents drug toxicity.
In a study, scientists took a group of patients with clogged livers and tested their livers for injury. They then gave half the group licorice root, and the other half a placebo. After two months, the licorice group saw their liver markers significantly improve. Their livers were recovering from injuries. In addition, they also reduced their body fat, while the placebo group had an increase in body fat.
In another study, scientists gave 100 patients with chronic liver problems glycyrrhizin, the major compound in licorice root. Four weeks later, the patients saw an amazing 88% improvement in their liver function tests, plus an 86% decrease in their symptoms!
And in yet another study, patients with inflamed livers were given glycyrrhizin twice a day. In just 3 months, their livers had no signs of inflammation. So by taking licorice root, you support both your liver and adrenal glands. But even that may not be enough. Why? Because performance of your liver also depends on your immune system.


Safeguard Your Liver by Boosting Your Immune System
Most people know the liver is responsible for detoxification. But what many people don't know is, your liver is also part of your immune system. It's loaded with immune cells, like macrophages, natural killer cells, T-cells, B-cells, and more. If your immune system is sluggish, your liver suffers, too. So you also need to strengthen your immune system.
One of the best ways to do that is to take a medicinal mushroom called Royal Agaricus (Agaricus blazei). Agaricus has the highest known levels of Beta-1,3-glucans of any mushroom. Beta-glucans help stimulate the immune system. They also help you fight off viruses, bacteria, and other dangerous pathogens.
But Agaricus does more than boost your immune system. Studies now show it also protects your liver from toxins. In one study, scientists injected a group of mice with carbon tetrachloride, one of the most toxic substances there is to the liver. They then gave the mice Agaricus or a placebo. Result? The Agaricus group almost completely blocked the toxin!
In another study, scientists pre-treated the rats with Agaricus or a placebo. They then injected the rats with a deadly poison called DEN. After the injection, the livers of the control group quickly deteriorated. But the Agaricus group's livers remained healthy, and functioned like normal!



Other studies also show that Agaricus blocks inflammation in the liver, protects liver and immune cells from toxicity and even guards the liver from a chemo drug.
Now be prepared for a third nutrient! This nutrient can unclog your liver and undo damage caused by alcohol. Your brain uses this nutrient to produce ‘messenger chemicals’. You need these messenger chemicals to remember. It is Phosphatidylcholine, or PC for short. PC is more than just a nutrient for your brain and memory. It is also vital for liver health. Studies show it helps remove fat deposits in the liver. Without PC, fat and cholesterol build up in your liver.

In addition, PC also reduces liver damage caused by alcohol, viruses and toxins. Not only that, it can even help a damaged liver regenerate. Yes! it can help the liver grow new cells. In a study, scientists took a group of rats and surgically removed part of their livers. They then injected PC into the rats. Within 30 hours, their damaged livers began to regenerate. That's incredible!

Scientists have found that Quercetin, a bioflavonoid, protects your liver from free radical attacks and DNA damage. Even more amazing, it can delay aging and help prolong life. In laboratory tests, scientists found it extended the lifespan of cells by up to 60%. Studies show that Quercetin also guards the liver against inflammatory damage, prevents fat accumulation in the liver and even reduces abdominal fat. Plus, it improves your cholesterol. In a study, patients taking Quercetin saw an 18% reduction in total cholesterol, a 27% reduction in (bad) LDL... and a whopping 33% increase in (good) HDL cholesterol.

Humans cannot make quercetin in their body, but many fruits, vegetables, and drinks contain it. According to research, quercetin can block baby fat cells from maturing and is more effective at inhibiting the rate of new fat cell formation than any other flavonoid. Quercetin is a natural antihistamine (antihistamines stop allergy symptoms)

Chicken Khow Suey...Made Healthy

Chicken Khow Suey...Made Healthy
At the outset let me tell you that I replaced the usual Hakka Noodles in Khow Suey with Whole Wheat Noodles. Otherwise I always found Khow Suey a healthy dish with its stir-fried chicken and lots of coconut milk


Ingredients
Chicken – 150 gms
Coconut Milk powder – ¾ cup
Laksa Paste – ¾ cup (adjust according to taste)
Ginger (grated) – 1 inch
Whole Wheat noodles (cooked) – 3/4 cup
Spring onions – 3 stems




Method
Cook the noodles according to instructions on the pack. Drain and keep aside
Cook or microwave the chicken
Cut the spring onion greens and keep aside for topping
Chop the whites and sauté in little oil
Keep aside for topping
Add water to coconut milk powder and make milk
Add 2 heaped tbsp Laksa paste to coconut milk and heat it on low for about 10 mins
Saute the grated ginger in little oil till browned
Add chicken and fry 
Add the remaining Laksa paste and fry well. Keep aside

Serving the Khow Suey
Place the noodles in a bowl
Spoon over the coconut milk
Add chicken and the toppings
Slurp, eat and enjoy this healthy version of Burmese Khow Suey

Prawn and Chicken Layered Biryani



This time it was a case of leftover chicken and prawns in the freezer. It was the perfect time to try out this two-layered biryani. I've been wanting prepare this ever since I had eaten it a few years ago. The result is mind-blowing. I don't think I will make plain chicken biryani ever again after this. It will have to be the multi-layered one only.
 This is the easiest possible version of Dum Biryani. Try it! You must if you love good food. And yes, this is not any healthy version. It's what a biryani should be like but I've tried to use as less oil as possible. So there's no oil sticking to your hands. So it's better than eating out but with no compromise on taste!


Rice Layer
Long grained rice – 200 gms
Wash and soak in water for 20 to 30 mins
Heat water and cook rice till just done
Drain and keep aside

Onion Base
Ingredients
Oil – 2 tbsp
Butter – 2 tbsp
Salt – ½ tsp
Baking soda – ¼ tsp
Onions – 4 (medium)
Method
Heat the oil and butter
Add onions and fry
Add salt and baking soda and stir fry till browned
Keep aside
(Baking soda is added for a caramelized effect)



Chicken Layer
Ingredients
Chicken – 250 gms
Fried onions – 3/4 part
Peppercorns - 5
Cloves (Laung) - 3
Cinnamon stick – 1”
Star anise- 1
Jeera (cumin seeds) - 1 tsp
Shahi jeera - 1 tsp
Big elaichi (cardamom) - 1
Small elaichi – 1
Salt – 1 tsp
Bay leaf (large) - 1
Haldi – ½ tsp
Oil – 1 tbsp
Butter – 1 tbsp
Curd – ½ cup
Biryani masala (any good brand of your choice or you can make it at home) – 2 tbsp
Method
Heat oil and butter
Add all the whole spices
Fry it and add 3/4th of the fried onions
Add the biryani masala and fry for a minute
Add chicken pieces and fry
Add curd and mix
Cook for 10 minutes or more till done
Keep aside



Prawn Layer
Ingredients
Prawns (fairly big) - 15 or 20
Fried onions – remaining ¼ part
Tomatoes (medium) – 1
Haldi – 1 tsp
Coriander powder – 1 tsp
Salt – to taste
Ghee – ¼ cup
Method
Add the fried onions, tomatoes and haldi to a non-stick pan and mix well
Add little water, cover and cook for 1 minute so that the tomato pieces soften
Add the prawns
Cover and cook for 5 mins



Assemble The Biryani Layers
Soak 1 tsp saffron in ½ cup milk
Take a non-stick pan
Add the chicken layer
Top it with a layer of rice
Add the prawn layer
Top it with another rice layer
Sprinkle saffron milk on the rice
Add melted ghee
Place few mint leaves and cover the pan tightly  
Keep the pan on a tawa
Place the tawa directly on the fire
Let it cook on slow for about 20 minutes depending on the moisture level of the chicken gravy
Serve with sliced onions and curd
