Rum Soaked Raisin Cookies
The festive season doesn't feel right without my famous rum soaked goodies. I kicked off the rum addiction with these awesome healthy, scrumptious and crispy cookies. They are very simple to make and go well with your evening cup of tea, coffee or milk. It could even be your breakfast when you are in a rush. It has the goodness of oats, wheat flour and jaggery along with coconut oil and walnuts; healthy fats. Yes, the rum soaked raisins add to the fun. So go on and enjoy them.


Ingredients
Wholewheat flour – 1 ¼ cups
Rolled oats – 1 cup
Jaggery (powdered) – ¾ cup (add more if desired)
Egg – 1
Butter – ½ cup
Coconut oil – ¼ cup
Raisins (soaked in run for a week or more) – ¾ cup (can add more)
Vanilla essence – ¼ tsp
Baking powder – ¼ tsp
Baking soda – ¼ tsp
Salt – ¼ tsp
Cinnamon – ½ tsp
Cloves, nutmeg, ginger – ¼ tsp each         
Walnut (roasted) – ¼ tsp


Method
Beat the jaggery and butter
Add egg, spice powders, salt, baking powder and soda and mix well
Add the wheat flour and mix well
Add little milk if the mixture is too dry
Add the oats and walnuts and mix
Add the raisins and mix again
Bake in a preheated oven at 170 degrees C for about 25 mins till done
Let it cool in the oven to become crisp
