Healthy Flaky Apple Pie

Apple Pie


For the health conscious, here's an apple pie that's truly healthy and almost guilt-free. Except for the butter, which is still lesser than what a normal pie contains, the rest of the ingredients are healthy. Maida or refined flour replaced with wholewheat flour, sugar replaced with jaggery. What more can one ask for? So go right ahead and enjoy, keeping the portion size in mind of course. That's my first rule even for a healthy snack. What's more! Diabetics too can enjoy this in moderation. Besides the healthy ingredients, it also has cinnamon (I have used double the normal amount) and ginger powder as well, to keep your sugars in check. So go on, enjoy it in moderation.  And yes, it's as delicious and flaky as its unhealthy version. But have it fresh and warm, preferably straight out of the oven.



Ingredients

Crust
Pie pan - 7"
Whole Wheat Flour – 3.5 cups
Salt - 1/2 tsp
Jaggery - 2 tbsp
Butter (chilled) – ½ to ¾ cup
Water  (ice cold) - 6-8 tbsp

Filling

Apples (peeled, cored and sliced) – 4
Lemon juice – 2 tbsp
Jaggery - 5 tbsp
Wholewheat flour – 2 tbsp
Cinnamon powder (Dalchini) – 1 tbsp
Ginger powder (optional) – ½ tsp
Salt - ½ tsp


Top Crust

Milk – 2 tbsp
Honey – 1 tbsp
Jaggery (for sprinkling) – 1 tbsp

Method

Preheat the oven to 160 C
Grease a pie pan and line the bottom with parchment paper




Filling

Mix all the dry ingredients in a bowl. Add the apple slices, lemon juice and mix till the apples are well coated

Crust

Combine the flour, salt, and jaggery in a bowl. Add the butter cubes and rub into the flour with your fingers till the mixture resembles a coarse meal.
Sprinkle ice water on it to make crumbly dough. Mix so that it just forms a ball that holds together.
Refrigerate it for a couple of hours.

Topping For the Crust

Combine the milk and honey in a bowl and keep aside. It will be used to brush over the pie crust to give it a nice golden brown colour when baked.


Making the pie

Place the chilled pie crust between two sheets of wax paper or plastic sheets. Using the heel of your palms, press down the dough to make it flat and pulling it outward to stretch the dough. Roll out the dough to a large round of quarter inch thickness. Check that it is bigger than the pie pan
Once rolled, gently remove it and transfer to your prepared pie pan. Gently press it in so that the dough fills out the inner edges and corners. Some part will still hang over the sides of the pan. Pour the apple mix into it and spread it around evenly.
Roll out the second pie dough in a similar way. Place it over the second rolled dough over the filling. Trim the excess dough and fold the overhanging bits over the edges sealing them together.
Brush the top with the milk and honey mixture. Make small slits all over on the top to let the steam escape. Place the pie crust in the preheated oven until the crust is golden brown for about 40 to 45 minutes.
Sprinkle jaggery powder over it. Cut into wedges and serve warm with tea, coffee or milk.

For dessert serve it with a scoop of vanilla icecream.

Prawns in Teriyaki Sauce..Bamboo Shoot Stir fry With Wholewheat Noodles


Ingredients
Wholewheat Noodles - 2 cups (cooked)
Ginger (grated) - 2 inch
Garlic (sliced finely) - 8 flakes
Tender Bamboo Shoot (small slices) - 1 cup
Capsicum, Red and yellow Bell Peppers (sliced) – ½ cup each
Soy sauce - 2 tsp
Green Chilies (sliced) - 4
Peppercorn (crushed) - 1/2 tsp
Oil - 3 tbsp
Salt - to taste


Method
Heat the oil
Add ginger and saute
Add garlic and saute
Add bamboo shoots and stirfy
Add the soy sauce and saute for a minute
Add the veggies and stirfry for a minute
Add the noodles and mix slowly
Serve hot with prawns in teriyaki sauce

Prawns in Teriyaki Sauce


Ingredients
Prawns - 8 big sized
Ginger (grated) - 2 inch
Garlic (sliced finely) - 10 flakes
Teriyaki Sauce – 2 tbsp
Hoisin sauce – 1 tsp
Soy sauce - 1 tsp
Peppercorn (crushed) - 1 tsp
Oil - 1 tbsp

Method
Marinate the prawns in the sauces and peppercorn for 10 minutes
Microwave for 1 minute
Drain out the water and keep aside
Add the sauces to the water and mix well
Heat the oil
Add ginger and saute
Add garlic and saute
Add prawns and stir fry quickly
Add the sauce mix
Mix well and saute till the sauce thickens and reaches the required consistency

Paan Rolls

Paan Rolls

Ever since I've discovered the joy of eating betel leaves (paan) in exciting ways, there's no end to my experimenting. Right from Chocolate Paan, Chocolate Paan Bites and Paan Shots, to now Paan Rolls, the list is growing. This one is great as just a cool, refreshing appetizer or a sweet ending to a meal. Any way, it satisfies my sweet cravings. My friends just love the different creations with paan. Finally, we've all found a healthy solution for our sweet cravings.



Ingredients
Paan (Betel leaves) – 5 (big sized Calcutta paan)
Paan sweet mix (green coloured) – 1 tbsp
Dessicated dry coconut – 1 tbsp
 Date paste – ½ cup
Fennel (saunf) – 2 tbsp
Betel nut (supari) clippings – 1 tbsp

Method
Soak dates in water just enough to cover them
Let it remain for about an hour or more
Blend it to form a paste
Add all the ingredients to the paste and mix well
Make rolls
Decorate with coloured saunf, dessicated coconut or chocolate sprinkles
Refrigerate for about 15 mins
Serve as an after-meal digestive or dessert
Refrigerate the remaining if any

The Traditional Way,,Diwali Celebration



Red Rice Sweet Flakes (Poha)


Ingredients
Red rice flakes (pounded rice) – 1 cup
Jaggery (powder) – ¼ cup
Cardamom powder – 1 tsp
Water – ¼ cup
Coconut flakes (fresh) – ¼ to ½ cup

Method
Heat water and add jiggery
Continue heating on low till jiggery melts and solution becomes sticky
Cool slightly
Add coconut and cardamom
Mix well with hands using pressing movements
Add rice flakes
Mix well and cover for 15 mins
Serve with baked sev and masala poha

Baked Sev


Ingredients
Chickpea flour (yellow gram flour) – 1 cup
Salt – 1 tsp
Hing – 1 tsp
Carom seeds (Ajwain) – ½ tsp
Turmeric powder – ½ tsp
Oil – 3 tbsp
Water – 1/3 cup (depending on moisture level)
Method
Mix dry ingredients
Heat oil
Add to the mix
Mix well to form crumbs
Add warm water  and slowly mix to form a dough
Grease a sev mould and place the dough
Bake in a preheated oven for 5 to 10 mins
Let it cool

Red Rice Masala Poha


Ingredients
Red rice flakes – 1 cup
Onion (large) – 1
Green chilies (optional) – 1 or 2 slit
Curry leaves – 2 sprigs
Coconut (fresh) – ¼ cup
Red chili powder – 1 tbsp (vary according to taste)                    
Jaggery powder – 1 tsp
Salt – to taste
Coriander powder – ½ tsp
Coconut oil – 1 tsp
Mustard seeds – ½ tsp

Method
Heat oil in a non-stick pan              
Add mustard seeds. When they splutter, add curry leaves
When they turn crisp, add onions and stir fry till they soften
Take off the fire
Add salt, chili and coriander powder
When it cools add coconut and mix well
Squeeze the mixture with your hand as if extracting juice from the coconut
Add rice flakes slowly little at a time and mix well
Serve immediately with ripe bananas and hot tea or coffee for a blissfully healthy breakfast

Diwali Prepping - Chocolate Rum Bombs...Assorted Crackers


Chocolate Rum Bombs



Ingredients
Cake crumbs (leftovers) – 1 ½  cups
Dark rum – 20 to 30 ml (depending on your preference)
Melted cooking dark chocolate – ½ cup
Mixed nuts – 2 tbsp
Tutty frutty – 4 tbsp

Method
Blend all the ingredients (except the tutty frutty) in a mixie
Mix the peels and shape into balls of desired size
Let it dry for an hour before you enjoy this slightly sinful version of rum ball
Note: I used leftovers of healthy pumpkin cake





Assorted Crackers


Ingredients
Wholewheat flour (slightly coarse variety) – 1 cup
Salt – to taste
Asafetida (hing) – 1 tbspOnion seeds – 1 tsp
Carom seeds (ajwain) – 1 tsp
Red chili powder – 1 tsp
Oil – ¼ cup
Warm water – ¼ cup (approx)


Banana flavour


Ingredients
Wholewheat flour (slightly coarse variety) – 1 cup
Salt – to taste
Black pepper (crushed) -  1 tsp
Oil – ¼ cup
Warm water – ¼ cup (approx)
Banana (ripe) mashed - 1

Method
Add all dry ingredients to flour
Mix well
Heat oil slightly and add to flour
Mix and check if you can make loose balls with it
If not, add little more oil
Add water little by little and mix to form tight dough

Different shapes




Shape 1
1.       Take small portion of the dough and roll it out
2.       Spread little oil or ghee all over and wholewheat flour over it
3.       Roll it to form a cylinder
4.       Cut into 1 inch pieces and flatten
5.       Roll out each piece to form circles
 
Shape 2
1.       Take small portion of the dough and roll it out
