Brown
Rice Kheer
A healthy breakfast for rice lovers or otherwise. I have
used traditional Brown rice obtained from a south Indian store in Matunga. I also
managed to get some organic jaggery. I soaked the rice for 4 to 5 hours and
then pressure cooked it well. I overcooked the rice. I drained out the water and
soaked the rice in milk for an hour. Then I microwaved it on low for 15 to 20
mins.

the recipe:
Ingredients:
Cooked brown rice - 1 cup
Low fat milk – 2 cups
Jaggery - 2 Tbsp
Sliced almonds - 1 tsp
Sliced walnuts - 1 tsp
Raisins - ½ tsp
Method:
Add rice to milk and microwave on low for 15 minutes
Let the milk thicken
Stir in the jaggery slowly till it mixes completely
Roast the almonds, walnuts and raisins in a little
ghee in a non stick pan and add to the kheer
Serve chilled for a healthy breakfast.
If you have been exercising regularly and eating right
the entire week then you can indulge yourself a bit. Add a heaped teaspoon of
milkmaid. Add walnuts, almonds and a few raisins. Chill it before eating.
Note:
Otherwise I love to eat 1 cup brown with dal, sabzi and curd or with a fish/chicken
curry and salad for a nutritious meal
