Amaranth Cookies

Guilt-free trip 

It's been a long time! What better way to reconnect than with a cup of strong, hot tea and a guilt-free cookie. I've used Rajgira atta (amaranth flour). I've replaced sugar with jaggery. Yes, I've used ghee but 2 tbsp ghee divided between 9 cookies is not much. The idea is to practice moderation. So enjoy!  



Amaranth Cookies






Ingredients

Amaranth flour (Rajgira ka atta) - 1 cup
Jaggery (powdered) - ½ cup
Almonds (powdered) - 5 tbsp
Cardamom powder - ½ tsp
Ghee - 2 tbsp
Salt - a pinch
Hot water – ¼ cup (approx)
Chopped pista for garnishing (optional)


Method

Mix ghee and flour well to form a crumbly mixture
Add jaggery, cardamom powder, almond powder and mix again
Add hot water slowly to form dough
Cover and refrigerate for 15 mins
Preheat the oven to 180 degrees C
Make small equal sized balls of the dough and make a cross over each with a sharp knife
Bake for 15 to 25 mins (the time varies with different ovens, so keep an eye on them to prevent them from getting burnt)
Cool. The cookies will become crisp
Sprinkle some chopped pista
