The Traditional Way,,Diwali Celebration



Red Rice Sweet Flakes (Poha)


Ingredients
Red rice flakes (pounded rice) – 1 cup
Jaggery (powder) – ¼ cup
Cardamom powder – 1 tsp
Water – ¼ cup
Coconut flakes (fresh) – ¼ to ½ cup

Method
Heat water and add jiggery
Continue heating on low till jiggery melts and solution becomes sticky
Cool slightly
Add coconut and cardamom
Mix well with hands using pressing movements
Add rice flakes
Mix well and cover for 15 mins
Serve with baked sev and masala poha

Baked Sev


Ingredients
Chickpea flour (yellow gram flour) – 1 cup
Salt – 1 tsp
Hing – 1 tsp
Carom seeds (Ajwain) – ½ tsp
Turmeric powder – ½ tsp
Oil – 3 tbsp
Water – 1/3 cup (depending on moisture level)
Method
Mix dry ingredients
Heat oil
Add to the mix
Mix well to form crumbs
Add warm water  and slowly mix to form a dough
Grease a sev mould and place the dough
Bake in a preheated oven for 5 to 10 mins
Let it cool

Red Rice Masala Poha


Ingredients
Red rice flakes – 1 cup
Onion (large) – 1
Green chilies (optional) – 1 or 2 slit
Curry leaves – 2 sprigs
Coconut (fresh) – ¼ cup
Red chili powder – 1 tbsp (vary according to taste)                    
Jaggery powder – 1 tsp
Salt – to taste
Coriander powder – ½ tsp
Coconut oil – 1 tsp
Mustard seeds – ½ tsp

Method
Heat oil in a non-stick pan              
Add mustard seeds. When they splutter, add curry leaves
When they turn crisp, add onions and stir fry till they soften
Take off the fire
Add salt, chili and coriander powder
When it cools add coconut and mix well
Squeeze the mixture with your hand as if extracting juice from the coconut
Add rice flakes slowly little at a time and mix well
Serve immediately with ripe bananas and hot tea or coffee for a blissfully healthy breakfast
